How Michael Symon prepare Short Rib Stroganoff?

The traditional Beef Stroganoff recipe is made with boneless rib eye cut, however, Michael Symon uses Short rib cuts to make his whole version of the beef stroganoff recipe.

Starting with cooking the beef meat and the mushrooms with onion and garlic and some someone such as salt and ground black pepper.

Once the meat is cooked remove and add the flour, milk, vinegar, or red wine and cook for a couple of minutes. Here you add the beef meat to the mixture and simmer until the beef is tender and you get a thick mixture.

You can choose to prepare pasta or rice to serve with beef Strongoff sauce.

Can I use cream instead of sour cream in Michael Symon Short Rib Stroganoff?

Yeah, I found so many recipes online that use cream, heavy cream, or even Cream cheese instead of sour cream in beef stroganoff sauce, and they said that the heavy cream makes the sauce smoother and thicker.

Michael Symon Short Rib Stroganoff Ingredients

  • 3 pounds stew meat (use beef short ribs)
  • 2 tablespoons smoked paprika
  • Salt and ground black pepper
  • 3 tablespoons oil (extra virgin olive oil)
  • 2 cups sliced mushrooms ( shiitakes)
  • 4 cloves garlic, sliced
  • 1 onion, thinly sliced (Yellow onion)
  • 3 tablespoons all-purpose flour
  • 1 cup vinegar ( or red wine)
  • 1 cup liquid ( mushroom stock made from the shiitake stems)
  • 1 cup milk
  • 1 pound dry pasta (pappardelle)
  • 1/2 cup sour cream
  • 1/4 cup diced pickles ( gherkins)
  • 1/4 cup chopped fresh parsley

How To Make Michael Symon Short Rib Stroganoff?

  1. Put the beef meat in a bowl ad season with the smoked paprika and some salt and black pepper.
  2. Heat a Dutch oven or heavy-bottomed pot over medium heat and add 3 tablespoons olive oil.
  3. Once the oil is heated, add the seasoned beef meat and cook until brown on both sides, it takes 3 to 5 min.
  4. Remove the meat from heat and transfer it to a plate and set aside.
  5. In the same dutch oven with the same oil, add the mushroom slices and cook until brown, about 2 to 3 minutes.
  6. Add the garlic and onions and cook, stirring occasionally, until starting to soften, an additional 2 minutes (make sure the onion and garlic are not browned).
  7. Add 3 tablespoons of all-purpose flour and cook the roux, stirring, for a couple of minutes.
  8. Whisk in the vinegar(or red wine) and bring to a simmer.
  9. Add the stock and milk, whisking to remove any lumps.
  10. Place the beef ribs back in the pot and simmer covered until the meat is tender about 2 hours. (You can cook also in the oven at 275 degrees F until tender.)
  11. Once the meat is cooked, remove it from heat or oven and set it aside to prepare the pasta.
  12. Bring a pot of water to a boil and add about 1-1/2 tablespoons of salt for every pound of pasta.
  13. Add the pasta, give it a stir and cook until al dente according to the package directions, usually takes between 8-12 mins on high heat.
  14. Once is cooked, drain and set aside.
  15. Add the sour cream, pickles, and parsley to the stroganoff and mix until combined.
  16. Serve the boiled pasta topped with stroganoff sauce and fresh parsley. You can cheese to top with grated Parmesan and basil.

How To Store Michael Symon Short Rib Stroganoff?

In The Fridge:

If you happen to have leftovers or are meal prepping, store Michael Symon Short Rib Stroganoff sauce into a well-closed glass container and place it in the fridge. Properly stored beef Stroganoff can last for 3 to 4 days in the fridge.

Also if you already had mixed the pasta with Michael Symon Short Rib Stroganoff sauce, can only last for 1or 2 days maximum. I recommend you to store the beef Stroganoff sauce alone without pasta.

In The Freezer:

If you prepare to freeze Michael Symon Short Rib Stroganoff sauce and used it for a couple of weeks or months later, you have to let the stroganoff cool until reaches room temperature then pour the sauce into well-closed glass containers and place it in the freezer. always avoid using plastics containers while storing.

How To Reheat:

Place the Michael Symon Short Rib Stroganoff sauce in the oven and reheat it for 15 to 20 min in the oven. you will know that the stroganoff is reheated well, once it reaches 160°F, that's why I can't give you the exact reheating time.

Also in the microwaves, Michael Symon Short Rib Stroganoff can take 10 min to reach 160°F, always check the temperature with a thermometer 5 min before the recommended time, and check consistently.

For Frozen Beef stroganoff I recommend you to thaw it before you reheat.

How To Thaw:

  • Methode 1: Place the frozen Michael Symon Short Rib Stroganoff in the fridge 12h or night before serving or reheating. The whole night can thaw completely the beef Stroganoff in the fridge.
  • Methode 2:  Place the frozen Michael Symon Short Rib Stroganoff container in a large bowl full of cold water with changing the water every 20 to 30 minutes, until the stroganoff is largely thawed, and then reheat it. This process can take between 2 to 4h to completely thaw.
